Carol Y. Anderson, age 84 of Belview, passed away peacefully on Saturday, April 29, 2023 surrounded by her family. Funeral Services will be held at 11:00 a.m. Saturday, May 6, 2023 at Christ’s Victory Lutheran Church in Redwood Falls. Visitation will be held Friday 5:00-7:00 p.m. at the Redwood Valley Funeral Home and will continue one hour prior to services on Saturday. Burial will be in the Belview Cemetery. 

Carol Yvonne Schrupp was born July 12, 1938 to Victor and Lacorda (Westermann) Schrupp at Sumter Township, McLeod County, Minnesota. She was baptized in the Lutheran faith on July 31, 1938 and confirmed at Immanuel Lutheran Church in Brownton in 1952. Following graduation from Brownton High School in 1956, Carol attended beauty school in Mankato. While working as a Beautician in New Ulm, she met Kenneth Anderson and they married on June 21, 1964 in Brownton. After living a short time in Springfield, they moved to their farm in Belview in the fall of 1965. After Ken’s passing in 2017, Carol continued to reside on the farm. Carol’s life on the farm centered around raising her children, ensuring meals and coffee were at the ready, providing many with a perm or haircut and tending to chores and her garden. She was an avid sports fan who loved all Minnesota teams but followed the Twins closest through cellphone alerts and keeping their season schedule within reach. Family, friends and traditions were most important to Carol. She hosted gatherings with ease and made all who entered her home feel welcome. Every holiday was carefully planned to include festive decorations throughout the house and an abundance of food served hourly. She surrounded her grandchildren with perfect love, plenty of tickles and chases around the house and instilled in them the traditions of lefse making and Super Bowl parties. She proudly talked of each grandchild and took special pride in becoming a great-grandma. Her quick wit was a joy to experience and will be missed.

Carol is survived by her children: Jill (Brad) Bengtson of Atwater, Beth (Juan Carlos Esparza) Anderson of Marshall, Jon (Anne) Anderson of Echo and Paul (Jenni Wurster) Anderson of North Mankato; grandchildren: Kendra Bengtson, Taylor Bengtson, Sara Schroeder, Ryan Schroeder, Kolten (Chyanne) Anderson, Jack Anderson; great-grandson Ridge Kenneth Anderson; sister Jan (Joe) Morrell; and many in-laws, nieces and nephews. She was preceded in death by her father Victor Schrupp, mother Lacorda Schrupp and husband Kenneth Anderson.
